Char-grilled pork with a black mole mirror, hoja santa and greens; served with marrow, coarse salt, and tortillas.
Slow-braised short rib wrapped in maguey mixiote, marinated in pulque and bathed in a smoky pasilla chile sauce. Served with fire-roasted nopal and traditional Mexican-style rice.
Slow-cooked cochinita pibil prepared in a clay pot. Served with sikil p’ak and ceremonial tortillas
