ENTRIES.
Tender, slow-cooked pork belly served in hand-made tortillas, topped with crispy onion rings, spicy serrano chili, fresh avocado slices, and a squeeze of lime.
SALAD.
Roasted lettuce hearts, toasted seeds and citrus vinaigrette.
SOUPS
Vegetable broth, pumpkin flower, mushrooms, grams of corn, spinach, epazote and crispy corn.
Traditional onion soup, gratin with Gruyere cheese.
MAIN COURSES.
Cooked slowly in the oven, accompanied by fried yucca, mashed banana and green tomato and cumin sauce.
Eggplant, pumpkin, peppers and tomato sauce flavored with saffron.
Cooked in butter with fine herbs, accompanied by false potato risotto, and fennel sauce.
Beef filet wrapped in bacon, shrimp marinated with red recado and guajillo chili, mashed potatoes with jalapeño and chimichurri with roasted pineapple.
Pomodoro sauce, squid, mussels, clams and shrimp with garlic croutons.

A succulent cream with pieces of pistachios, a layer of burnt sugar, and fresh fruit.
A creamy and silky goat cheese panna cotta, perfectly balanced with a tangy passion fruit coulis, fresh red berries, and crispy Serrano ham.
Rich chocolate cake soaked in aged rum syrup, layered with a decadent 52% and 70% dark chocolate ganache. Served with fresh strawberries for the perfect finishing touch.
