ENTRIES
Wrapped in potato and fried on a bed of fresh carrot and jicama salad with sweet and sour sauce and toasted peanuts.
Nixtamal tostada with mushrooms and hoja santa, atápakua sauce and refried beans, traditional comfort with a refined touch.
Maize tostadas topped with shredded pork tzic, radish slices, and lemon zest.
SALADS
Crisp romaine lettuce with homemade Caesar dressing, parmesan cheese, and your choice of grilled protein at an additional cost.
Mixed greens, mango, passion fruit–honey vinaigrette, candied pecans, and goat cheese.
Roasted beets cured in aguamiel, with smoky guava dressing, walnuts, blackberries, charred guava and radicchio.
SOUPS
with lemon grass essence accompanied by mussels, squid and clam.
MAIN COURSES
Char-grilled pork with a black mole mirror, hoja santa and greens; served with marrow, coarse salt, and tortillas.
Slow-braised short rib wrapped in maguey mixiote, marinated in pulque and bathed in a smoky pasilla chile sauce. Served with fire-roasted nopal and traditional Mexican-style rice.
Slow-cooked cochinita pibil prepared in a clay pot. Served with sikil p’ak and ceremonial tortillas
White fish fillet encrusted with a medley of dried chiles and coriander, served with a golden plum and hoja santa sauce, accompanied by a roasted garlic vinaigrette.
DESSERTS
A slice of chocolate sponge cake layered with caramel, a touch of salt, and dusted with cocoa.
A succulent cream with pieces of pistachios, a layer of burnt sugar, and fresh fruit.
Baked at high temperature for a golden top and creamy center. Made with cream cheese, eggs, and heavy cream—no crust.
